Good agricultural practices (GAP) and good handling practices
(GHP)
These terms encompass the general voluntary procedures growers,
packers and processors of fresh fruits and vegetables should follow
to ensure the safety of their product. GAP usually deals with
preharvest practices (i.e., in the field), while GHP covers
postharvest practices, including packing and shipping. Growers who
supply fresh produce to grocery stores and restaurants are
increasingly being asked to supply documented evidence that GAP
standards are being followed. An inspection from an independent
third party auditor is typically required at some point during the
harvest season.
